Your experience is what matters. Do stuff related, around it, or directly related. It all helps, because employers see that you have gone out of your way to go the extra mile. It's still engineering too -- it's not like you're taking on a sociology internship.

Sociology sounds interesting, but I think is coupled up better with other majors too. Like I would do a sociology minor with my business major because it allows me to understand who I'm ripping money from.
